EAT at La Pergola, perched atop the Rome Cavalieri Hilton. This three-star Michelin restaurant requires reservations at least a month in advance. When I ate there, John Mayer and Jessica Simpson were sampling the gourmet genius of Heinz Beck—a German who works his magic with local Italian ingredients. At Vivendo, in the St. Regis Grand, the dishes, setting and service are certain to delight. At La Ninfa, in the Hotel Majestic Roma, the homemade smoked salmon blows away any smoked fish I’ve ever eaten—and I’ve sampled a lot of smoked salmon.
